HOW TO MAKE ONE POT MEXICAN RICE CASSEROLE

In this recipe, the rice is prepared in the saucepan itself! You are free to change the recipe and include whatever vegetables tickle your fancy. This Mexican One-Pot Rice Casserole is a full dinner that can be prepared in less than half an hour using just one pot! This delicious dish with meat, rice, corn, and plenty of Mexican flavor will be a hit with the entire family! 

First, this recipe can be used as a main dish or as a side dish. If you want to experiment with a tapas-style setting, serve it as a side dish. The Mexican Rice Casserole that's made in just one pot is delicious at any time of the year. It doesn't matter whether it's the middle of a hot summer or a cold winter. In less than 30 minutes, you can prepare this dish that is perfect for meal prepping or feeding a crowd. 

You can easily change a few of the ingredients in this recipe to make it healthier for someone who is trying to eat better. The first step is to switch to brown rice from white. Brown rice is rich in fiber, magnesium, and a plethora of other essential minerals for the human body. White rice, which is made with artificial nutrients, is not as nutritious. You also have the option of trying ground turkey or chicken instead of beef. Clearly, the flavor and texture may vary somewhat, but both of these meats are leaner and contain less fat.


THE INGREDIENTS LIST: 

Ground Beef; I used 1 pound. 

A small Diced Onion.

Salt & Pepper. 

2 Tbsp.Of Taco Seasoning.

1 Tsp.Of Garlic Powder.

1 cup White Rice.

1 ½ Cups.Of Beef Broth.

A drained can.Of Corn. 

An 8-oz can. Of Tomato Sauce. 

½ Cup.Of Salsa. 

1 Cup.Of Shredded Cheese. 


PREPARATION: 

1st Step

After seasoning the ground beef with salt and pepper, place it in a big pan and cook it over medium heat until it is browned. 

2nd Step

Garnish the ground meat with garlic powder and taco spice, then stir until well combined. 

3rd Step

In a skillet over medium heat, combine the tomato sauce, salsa, and rice before adding the beef stock. Throw in the corn, and combine everything well. 

4th Step

Put the lid on the pan and bring the liquid to a boil. Reduce the heat to a low setting and maintain a simmer for around 18 to 20 minutes, or until the rice is cooked through. 

5th Step

Spread the cheese over the top, then cover it once more. Let the cheese around two to three minutes to melt completely.
