HOW TO MAKE ORANGE MERINGUE PIE

Ingredients:

One (9-inch/23-cm) of uncooked pie crust or prepared pie crust.

¾ cup of sugar. 

⅓ cup of cornstarch.

One pinch of salt.

One cup of orange juice.

Half a cup of lemon juice.

¼ cup of water.

Four separated eggs.

Four tbsp. of butter or margarine, cut into pieces.

Two tsp. of grated orange zest.

Half a cup of diced orange segments.

Half a cup of white sugar.

¼ tsp. of cream of tartar.

Directions:

Step 1- Crust (if using a ready-made pie, skip this step)

To 400°F (205°C), preheat your oven. With aluminum foil, line pastry and a layer of pie weights or dried beans. 
About 10 minutes, Bake in the preheated oven until rim of crust is golden brown, and remove carefully the foil and weights; then bake for about 5 more minutes.

Step 2 - Filling

Stir the ¾ cup sugar, 1/3 cup of cornstarch, and salt in a small saucepan. Blend the juice of orange, lemon and water and whisk in the egg yolks. Then,  cook on a medium heat, stir frequently, until it becomes thick and bubbly, for about 5 min. Remove from the heat, and stir in butter and the orange zest (stir in diced orange cubs if desired). Pour into prepared pie crust and cover with plastic wrap, and then, set let to cool.

Step 3

Meringue

Preheat the oven to 350°F (175°C) and prepare meringue, when pie filling has cooled (to room temperature). Beat the egg whites until it becomes foamy in a large glass or metal bowl. Add gradually half a cup of sugar and cream of tartar, keep beating until stiff peaks form. Lift the paddle or whisk straight up (The egg white should form a sharp peak that will keep its shape).

Then, spread on over pie, ensure that the meringue completely covered the filling and meets the edges of the pie crust.

Step 4

Keep baking in preheated oven until the meringue topping becomes golden brown, for about 15 minutes.
